Finca El Pergamino Geisha Washed Anaerobic is the experimental side of one of Panama's most talked-about new farms. At Best of Panama 2026, Finca El Pergamino took 2nd place in the Geisha Washed category with 96.00 points, finishing ahead of Hacienda La Esmeralda, and its Geisha went on to be the coffee of both the champion and the runner-up at the 2026 World Barista Championship. This 250g lot takes the same Geisha from the same hillside in Bambito and adds a step: a controlled anaerobic fermentation before washing, for a cup that keeps the floral elegance of the washed Geisha and layers on extra sweetness, ripe stone fruit and a longer, more aromatic finish.
From a Best of Panama 2026 podium farm. Finca El Pergamino placed 2nd in Geisha Washed (96.00 points) and its Geisha was served by the 2026 World Barista Champion. This is the farm's anaerobic take on that same Geisha — a small-lot, limited-release coffee.
What "Washed Anaerobic" Means
After harvest, the Geisha cherries are sealed in oxygen-free tanks for a controlled fermentation. Without oxygen, different microbes take over and produce a very specific set of aromatic compounds: tropical fruit, deeper sweetness, a rounder body. The cherries are then depulped and washed in the classic way, so the fermentation character is layered on top of the clean, transparent profile the washed process is known for — not instead of it. The result is a Geisha that is still unmistakably floral and precise, with more fruit, more sweetness and a noticeably longer finish than the standard washed lot.
A Geisha From the Quiet Side of Barú
Finca El Pergamino sits in Bambito, in the Tierras Altas district of Chiriquí, between Volcán and Cerro Punta, at roughly 1,800 to 2,000 meters above sea level. The farm is owned and worked by Yaneth de Lucich and her family, on volcanic soil surrounded by dense forest. The cool, misty microclimate slows cherry maturation and concentrates sugars and aromatics — the foundation that lets a careful anaerobic fermentation shine rather than dominate.
Tasting Notes
Expect jasmine and white florals on the nose, bergamot and lemon brightness, ripe peach sweetness in the cup, a silky, slightly fuller body than the washed lot, and a long, perfumed finish. Roasted medium (3 of 5) to keep the florals and acidity intact.

Washed or Washed Anaerobic?
If you want the pure, tea-like clarity that the Best of Panama judges scored at 96.00, the El Pergamino Geisha Washed 250g is the reference. If you want the same Geisha with more fruit, more sweetness and a more intense aromatic finish, this anaerobic lot is the one. Tasting both side by side is one of the clearest ways to understand how processing shapes a coffee.
How to Brew El Pergamino Geisha Washed Anaerobic
Brew it black as pour-over. Use filtered water at 200°F (93°C), a medium-fine grind, and a 1:16 ratio (e.g., 15g coffee to 240g water) in a V60 or Chemex. Skip milk — the florals and fruit are the whole point. Grind fresh immediately before brewing. New to Geisha? Follow our complete guide to brewing Panama Geisha at home.

Frequently Asked Questions
What is washed anaerobic coffee?
The cherries are fermented in sealed, oxygen-free tanks before being depulped and washed. The anaerobic step adds tropical fruit, sweetness and body; the washed step keeps the cup clean and transparent.
How is it different from the El Pergamino Geisha Washed?
Same Geisha, same farm, same hillside in Bambito. The anaerobic lot has more ripe fruit, more sweetness and a longer, more aromatic finish; the washed lot is cleaner and more tea-like.
