Panama Bourbon Coffee — The Original Sweetness, Grown in Boquete's Highlands

Bourbon is where great coffee begins. One of the two original Arabica varieties, it appeared as a natural mutation of Typica on the island of Bourbon — today's Réunion — and travelled from there into Latin America, where it became the parent of Caturra and, through Caturra, of Catuai and Mundo Novo. Nearly every famous variety grown in Panama today traces its family tree back to this one.

What Bourbon gives you in the cup is sweetness and completeness rather than fireworks. Expect caramel, brown sugar, milk chocolate, and gentle red-apple or stone-fruit acidity, with a medium body, soft acidity, and a clean, nutty-sweet finish. Grown at 1,600 to 2,000 meters in Boquete's volcanic soil and cool mountain air, the cherry ripens slowly and the sugars concentrate — which is exactly why highland Panamanian Bourbon tastes rounder and sweeter than the same variety grown lower down.

Bourbon is also one of the most forgiving and versatile coffees we carry. It is beautiful black as a pour-over, and it has the body and sugar to stand up to pressure and milk, making it an excellent choice for espresso and for lattes and cappuccinos. To see how it compares with its own descendants, read our guide to Panama coffee varieties — or taste the family side by side with our Caturra and Catuai collections.
