Five Generations on the Slopes of Volcán Barú

Nestled in the misty highlands of Volcancito, Boquete, Don Pepe Estate has been one of Panama's most celebrated family farms since 1898 — the first company specializing in coffee in the entire Republic of Panama. Today, guided by the legacy of Don Tony and the dedication of the Vasquez-Flores family, the farm grows seven of the world's finest coffee varieties across 145 meticulously managed acres and 24 separate plots, with its own cupping lab and Q graders checking quality before every shipment.

What Is the Bourbon Coffee Variety?

Bourbon is one of the two original Arabica varieties that seeded the modern coffee world. It emerged as a natural mutation of Typica on the island of Bourbon — today's Réunion — and travelled from there into Latin America, where it became the parent of Caturra, and through Caturra, of Catuai and Mundo Novo. Bourbon yields less than its descendants and demands more from the farmer, which is exactly why it survives only where quality matters more than volume. What it gives back is sweetness: a rounder, more sugary, more complete cup than almost any modern cultivar.

Flavor Profile

Expect caramel and brown-sugar sweetness, milk chocolate through the body, gentle red-apple and stone-fruit acidity, and a clean, lingering, nutty-sweet finish. Medium body, soft acidity, no harsh edges. The bag says it best: unique, versatile, and of great balance. It is excellent black as a pour-over, and it is one of the few Panamanian coffees that genuinely improves a cappuccino instead of disappearing into it.

Grown at Altitude

Don Pepe grows its Bourbon at 1,600 to 2,000 m.a.s.l. in rich volcanic soil, with cool mountain temperatures averaging 21°C and around 2,950mm of annual rainfall. At that altitude the cherry ripens slowly, and slow ripening is what builds the sugars and acids that show up later as caramel and fruit in your cup.

How to Brew Don Pepe Bourbon

Grind fresh immediately before brewing. Filtered water at 200°F (93°C).

  • Pour-Over (V60 / Chemex) — medium-fine grind | 1:16 ratio | 3–4 min. Cleanest expression of the caramel sweetness.
  • French Press — coarse grind | 1:15 ratio | steep 4 min. Fuller body, more chocolate.
