Five Generations. One Extraordinary, Rarely Seen Variety

Nestled on the slopes of Volcán Barú in the misty highlands of Volcancito, Boquete, Don Pepe Estate has been one of Panama's most celebrated family farms since 1898 — making it the first company specializing in coffee in the entire Republic of Panama. Today, guided by the legacy of Don Tony and the dedication of the Vasquez-Flores family, the farm grows seven of the world's finest coffee varieties across 145 meticulously managed acres.

What is the Java Variety?

The Java variety — originally introduced to Panama from the Indonesian island of Java — is one of the most distinctive and complex Arabica varieties in the specialty coffee world. It is not widely grown and remains relatively rare even among specialty producers. Java is known for its extravagant, robust, and deeply interesting cup profile — bold enough to captivate the most experienced palate, yet elegant enough to reward careful attention.

Flavor Profile

The washed process — meticulous and precise, using raised African drying beds — strips away any interference and lets the Java variety's character express itself with extraordinary clarity. The result: extravagant, robust, deeply interesting. Tasting notes: sweet spice, citrus, floral cocoa, juicy acidity, sweet orange, lime, lingering floral cocoa finish.

Grown at Altitude

At Don Pepe, Java is grown at 1,600–2,000 m.a.s.l. in rich volcanic soil, with cool mountain temperatures averaging 21°C and 2,950mm of annual rainfall. The farm operates with its own cupping lab and Q graders verifying quality before every shipment.
