A Natural Catuai From Bambito, Tierras Altas

Bambito is a narrow, cool valley in the Tierras Altas district of Chiriquí, on the western slopes of the Barú volcano between Volcán and Cerro Punta. At 1,750 meters above sea level, cold nights, clean mountain water and deep volcanic soil slow the cherry down, and slow cherry means concentrated sugar. It is the same highland corridor that produces Panama's most expensive Geisha lots — this coffee simply comes from the varietal that Panamanian families actually drink.

What the Natural Process Does to Catuai

In natural processing the cherry is dried whole, with the fruit still on the bean, so the sugars in the pulp ferment slowly into the seed. Catuai is already a sweet, balanced, chocolate-leaning varietal; the natural process pushes it toward jammy fruit and cane sugar without losing the body. The result is a rounder, sweeter, fruitier cup than a washed Catuai, and a far more forgiving one to brew than a delicate Geisha.
