In natural processing, coffee cherries are dried whole with the fruit still attached — unlike the more common washed process, which removes the fruit before drying. The sugars and acids from the fruit migrate into the bean during drying, producing a cup with vibrant acidity, complex fruit notes, and a fuller body. Natural processing demands meticulous craftsmanship: cherries must be turned regularly on the drying beds to prevent over-fermentation, and only the ripest fruit can be selected.

About the Catuai Varietal

Catuai is a hybrid Arabica varietal — a cross between Mundo Novo and Caturra — known for its balanced cup, consistent quality, and adaptability to high-altitude growing. When processed naturally, Catuai delivers bright acidity layered with stone fruit, berry, and tropical notes.
