Caramel, black tea, dark chocolate. The caramel arrives first as a soft, sugary sweetness. Underneath it there is a black-tea quality — that gentle, tannic lift that clean washed coffees do so well — and the finish settles into dark chocolate. Medium body, moderate acidity, long and comforting. This is a coffee to drink every morning, not one to analyze.

About the Typica Variety

Typica is the mother of modern Arabica. Bourbon, Caturra, Catuai and Geisha all trace their lineage back through it. It is low-yielding and slow-growing — which is precisely why most farms replaced it, and why the estates that kept it are worth seeking out. In the cup, Typica is prized for clarity, refined sweetness, gentle acidity and a silky texture. It does not shout. It is simply coffee, done properly.

Why Washed Processing Matters Here

In the washed process, the fruit is removed from the cherry before the bean is dried, so nothing from the pulp masks what is underneath. What is left is the bean itself: the variety, the soil, the altitude. That transparency is exactly why washing suits Typica — the sweetness and the tea-like texture are the variety's own, not borrowed from the fruit. A washed coffee is also a harder coffee to hide behind, which is a good sign when the cup is this clean.

How to Brew Typica Washed

Grind fresh right before brewing if you take the whole bean. Use filtered water at 200°F (93°C).

  • Pour-Over (V60 / Chemex / Kalita Wave) — medium-fine | 1:16 | 3–4 min. The clearest look at the caramel and the black-tea finish.
  • Drip / Filter — medium | 1:17 | 5–6 min. The easy everyday cup, and a very good one.
  • French Press — coarse | 1:15 | steep 4 min. Pushes the dark chocolate forward.
  • AeroPress — medium-fine | 1:15 | 2–3 min. Sweet and concentrated.
  • Espresso / Moka Pot — fine | 1:2 | 25–30 sec. Chocolatey and syrupy; the caramel holds up well against milk.
