Best Coffee for Iced Coffee: 5 Panama Picks for Flash Brew and Iced Lattes

By Juan Carlos Sosa (@thecoffeejuan) | Boquete Coffee Traders

Iced coffee and cold brew are not the same drink, and they do not want the same beans. Cold brew steeps for hours and rewards heavy, chocolatey coffee. Iced coffee is brewed hot and chilled fast, so it keeps all the acidity and aroma that the cold steep throws away. That means the best coffee for iced coffee is bright, clean and aromatic, the very lots that would be wasted in a cold brew pitcher. Here are the five Panama coffees I pour over ice, sourced fresh from Panama's finest producers and roasters and delivered worldwide in 5 days.

These are not picks off a spec sheet. I source the coffees at Boquete Coffee Traders from the estates and roasters of Boquete, Volcan and Renacimiento, and every bag on this list is one I actually flash brew over ice, judged by what survives the chill. Looking for the long, slow steep instead? That is a different bean and a different list: see my best coffee for cold brew. Iced coffee vs cold brew: why the beans change

Most "iced coffee" guides quietly hand you a cold brew list. The two methods pull opposite things out of the bean, so it is worth being precise:

  • Iced coffee is brewed hot. Whether you flash brew a pour-over directly onto ice (the Japanese iced coffee method), pull espresso over ice, or chill a pot of drip, the hot water extracts the full range of acids and aromatics. Chilling them fast locks them in. The result is bright, crisp and fragrant.
  • Cold brew never sees heat. A 12 to 18 hour cold steep leaves most of the acidity behind and pulls sweetness and body instead. It is smooth and chocolatey, and it flattens delicate florals, which is why Geisha is a poor cold brew but a spectacular iced coffee.
  • So the picks flip. For iced coffee you want clean washed lots, honey-processed sweetness and, if you can, a Geisha. Save the heavy, low-acid coffees for the cold brew pitcher.
  • Ice dilutes, so brew strong. Flash brewing replaces part of the water with ice, and iced lattes add milk on top. Coffees with clear, intense flavor hold up; timid ones vanish. If you want to understand the processing side, see my washed vs natural vs honey guide.

Every coffee below is sourced fresh from the producer in Panama and shipped sealed to protect freshness, so it reaches you at its best rather than sitting on a shelf.

The 5 best coffees for iced coffee

1. Carmen Estate Geisha - 225g

If you have ever wondered what a Best of Panama champion tastes like over ice, this is the answer: jasmine, bergamot and a sparkling citrus acidity that reads like a chilled white wine. Carmen Estate, from the Franceschi family in Paso Ancho, Volcan, took 1st place in the Washed Geisha category at Best of Panama with 96.50 points and sold for $10,005 per kilo at auction. Flash brewed straight onto ice, the florals that cold brew would erase stay vivid and clean. Serve it black, no sugar, no milk, and let it warm slightly in the glass.

2. Cafe Unido La Harpia Espresso Blend - 340g

An iced latte is mostly milk and ice, so the coffee underneath has to be loud. La Harpia, from Panama City's best-known specialty roaster, is roasted for espresso: cocoa, caramel and a dense body that stays present even after a full glass of cold milk. Pull a double shot over ice, add milk, and it tastes like a proper cafe iced latte rather than coffee-flavored milk. It also makes the best iced mocha in the shop if you stir in a square of Panama dark chocolate.

3. Cafe Victoria Geisha - 250g

Geisha iced coffee every day is a luxury, unless you know about Cafe Victoria. This is a certified organic Geisha from Panama at a fraction of the auction-lot price, and over ice it delivers what you buy Geisha for: a light body, honey sweetness and unmistakable floral aromatics. It is not as intense as Carmen Estate, but it is the bag that lets you make a Geisha iced pour-over on a Tuesday without thinking about the cost per cup.

4. Elida Estate Catuai Honey - 340g

Honey processing leaves part of the fruit on the bean while it dries, and that sweetness is exactly what iced coffee needs, because cold mutes sugar. From the Lamastus family's Elida Estate, one of the highest farms in Boquete, this Catuai flash brews into red fruit, caramel and a round, syrupy finish that tastes lightly sweetened with nothing added. It is the pick for people who normally reach for the simple syrup.

5. Finca El Pergamino Catuai Natural - 250g

Finca El Pergamino, in Volcan, took 2nd place in the Washed Geisha category at Best of Panama 2026, and this natural-processed Catuai is the affordable way into that farm. Dried whole in the cherry, it flash brews into ripe tropical fruit, red berries and a winey, juicy finish that gets more vivid as the ice melts. Where the Elida honey is sweet and caramel, this one is fruit first, the glass for people who want their iced coffee to taste like a fruit punch made by a serious farm.

Which should you choose?

Drink it black and want the best glass of iced coffee you have had? Flash brew the Carmen Estate Geisha. Making iced lattes with a machine? La Harpia is the only one on this list built for milk. Want Geisha florals without the Geisha price? Cafe Victoria. Like your iced coffee sweet and fruity but skip the syrup? Elida Catuai Honey. And if you want the fruitiest glass on the list from a Best of Panama farm, the El Pergamino Catuai Natural is the one.

One thing to avoid: very dark, oily roasts. Chilled, they turn ashy and bitter and demand sugar to be drinkable. Medium and light roasts with real sweetness are what make iced coffee good.

How to flash brew over ice

The Japanese iced coffee method is the simplest way to make excellent iced coffee, and it needs nothing you do not already own for pour-over:

  • Ratio: use your normal pour-over dose, about 1:16 total, but put roughly 40 percent of the water in the carafe as ice. For 20g of coffee and 320g of total water, that is about 130g of ice in the carafe and 190g of hot water poured through the grounds.
  • Grind a touch finer than your usual pour-over, because you are pouring less hot water through the bed. My grind size chart has the reference.
  • Water at 92 to 94 C, bloom for 30 seconds, then pour in slow circles. The brew lands directly on the ice and chills in seconds, which is what preserves the aroma.
  • Serve immediately over fresh ice. For a slower-melting, cafe-style glass, small clear nugget ice works best.
  • For iced lattes: pull a double espresso, pour it over a full glass of ice, then add cold milk. Never pour milk first.

Frequently asked questions

What is the best coffee for iced coffee?

Bright, clean, aromatic coffees at a light to medium roast. Because iced coffee is brewed hot and chilled fast, it keeps the acidity and aromatics, so washed Geisha and honey-processed lots shine. Our top pick is the Carmen Estate Geisha flash brewed directly over ice.

Is iced coffee the same as cold brew?

No. Iced coffee is brewed hot and then chilled, which preserves acidity and aroma. Cold brew is steeped in cold water for 12 to 18 hours, which leaves most acidity behind and produces a smoother, heavier, chocolatey drink. They suit different beans.

What is the best coffee for an iced latte?

An espresso-roasted coffee with body and cocoa sweetness, so it cuts through cold milk and ice. Cafe Unido's La Harpia Espresso Blend is our pick. Delicate Geisha gets lost under milk.

What is the ratio for Japanese iced coffee?

Keep your normal pour-over ratio of about 1:16, but replace roughly 40 percent of the water with ice in the carafe. For 20 grams of coffee use about 130 grams of ice and 190 grams of hot water, and grind slightly finer than usual.

Can you use Geisha coffee for iced coffee?

Yes, and it is one of the best uses of Geisha. Flash brewing over ice locks in the jasmine and citrus aromatics. Just avoid cold brewing it, which flattens those delicate notes.

Should iced coffee be dark roast?

Usually not. Very dark roasts turn ashy and bitter when chilled and need sugar to balance. Light and medium roasts with natural sweetness make a cleaner, more refreshing iced coffee.
