Lamastus Family Estates Catuai Honey is a beautifully sweet, silky coffee that sits right between the clean brightness of a washed and the bold fruitiness of a natural. Grown at 1,700–1,950 meters on Elida Estate — the highest coffee farm in Panama — this honey-process Catuai showcases the Lamastus family's mastery of processing techniques at an elite level.

In the honey process, the outer skin of the coffee cherry is removed but a controlled amount of the sticky, sugar-rich mucilage (the "honey") is left on the bean during drying. This allows the fruit's natural sweetness to absorb into the bean without the full intensity of a natural process. The result is a cup with rich caramel sweetness, smooth stone fruit notes, and a velvety body that lingers on the palate. It's complex but approachable — sweet without being heavy, fruity without being overwhelming.

The Lamastus family has been producing coffee in Boquete since 1918, now led by fourth-generation producers Wilford Lamastus Sr. and Wilford Jr. Their estates — Elida, El Burro, and Luito Geisha — sit at ultra-high elevations in the Alto Quiel region, partially within Volcán Barú National Park. The family is renowned not just for growing exceptional coffee, but for their cupping expertise, which allows them to fine-tune processing methods and develop specific flavor profiles with remarkable precision. They've set multiple world records at the Best of Panama competition and their auction coffees have sold for thousands of dollars per pound.

At these extreme altitudes, the cool, foggy microclimate of Volcán Barú's cloud forest slows cherry maturation dramatically. The result is denser beans packed with concentrated sugars and complex flavors that only ultra-high-elevation terroir can produce. Over half of the estate is protected virgin rainforest, home to quetzals, jaguars, and exotic plant species — a working farm that doubles as an ecological sanctuary.

How to Brew

For best results, grind fresh immediately before brewing. Use filtered water heated to 200°F (93°C).

  • Espresso — Grind: fine | Ratio: 1:2 (e.g., 18g in : 36g out) | Brew time: 25–30 sec. Rich, dense, and aromatic.
  • French Press — Grind: coarse | Ratio: 1:15 | Steep 4 min. Smooth and full-bodied.
  • Pour-Over (V60 / Chemex) — Grind: medium-fine | Ratio: 1:15 | Brew time: 3–4 min. Clean and nuanced.
  • Drip / Filter — Grind: medium | Ratio: 1:17 | Brew time: 5–6 min. Balanced and easy for everyday drinking.
  • Moka Pot — Grind: fine-medium | Fill to valve | Bold and intense.

Tip: Store beans in an airtight container away from light and heat. Grind only what you need.
