Café Unido was founded in 2014 by Benito Bermúdez, Feres Yebaile, and chef Mario Castrellón — the same Mario Castrellón behind Maito, the only Panamanian restaurant to appear on Latin America's 50 Best Restaurants list. From day one, Café Unido operated as a 100% direct-trade roaster. They buy coffee straight from over 50 farms across Panama's highlands — no brokers, no middlemen. They work closely with members of the Specialty Coffee Association of Panama (SCAP) and visit farms personally to select micro-lots, design custom processing methods, and secure winning auction lots that most roasters never get access to.

Their roasting philosophy is transparency. The goal isn't to impose a roast profile on the beans — it's to let the terroir, the varietal, and the farm's processing method speak for themselves. Every batch is roasted in small quantities at their lab in Panama City, and every cup is meant to reflect the highlands where the coffee was grown.

How to Brew Café Unido at Home

Café Unido's team are trained baristas, and they recommend different brew methods depending on the coffee:

For La Harpía (Espresso Blend): As the name suggests, this coffee shines as espresso. Pull a standard double shot (18g in, 36g out, 25-30 seconds) and enjoy it straight or with steamed milk. It also works beautifully in a Moka pot for a strong, rich cup.

For Geishify and Geisha lots: Pour-over methods like the Hario V60 or Chemex are ideal. These methods highlight the delicate floral and fruit notes that make Geisha coffee world-famous. Use a 1:16 coffee-to-water ratio, water temperature around 200°F (93°C), and a medium-fine grind. Take your time with the pour — these coffees reward patience.

For French Press or AeroPress: Any Café Unido coffee works well here. Use a coarser grind for French Press (4-minute steep) or a fine grind for AeroPress (1-2 minute steep with inverted method). Both methods bring out the body and sweetness that Panamanian coffees are known for.
