The Story Behind Don Pepe Estate Coffee
Don Pepe Estate Coffee isn't just another coffee brand — it's a living piece of Panamanian history. The farm was founded in 1898 by the Vasquez family in the Volcancito area of Boquete, Chiriquí, making it one of the oldest continuously operating coffee estates in Panama.
For over 125 years and across five generations, the family has dedicated itself to cultivating the highest quality coffee in one of the most privileged growing regions on Earth. The late Antonio Vasquez — affectionately known as "Don Tony" — spent his entire life ensuring the farm would continue growing and producing exceptional coffee for generations to come. His vision lives on through the current generation, who carry forward his passion for quality and environmental stewardship.
The farm spans approximately 70 hectares in the highlands of Volcancito, at elevations between 1,500 and 2,000 meters above sea level, on the slopes of Volcán Barú. Of that land, 10% has been set aside to preserve the adjoining rainforest — a commitment to environmental sustainability that was central to Don Tony's legacy.
What Makes Don Pepe Estate Coffee Special
Exceptional Terroir
Don Pepe Estate sits in what many experts consider the prime coffee-growing land in all of Panama. The farm enjoys a year-round microclimate with average temperatures of 21°C and annual rainfall of 2,950mm. Combined with rich volcanic soil from Barú and the unique dual-ocean weather patterns that define Chiriquí's highlands, these conditions create coffee with extraordinary depth and complexity.
Seven Distinct Varieties
Unlike many farms that focus on just one or two varieties, Don Pepe cultivates seven distinct coffee varieties: Geisha, Caturra, Catuai, Bourbon, Typica, Java, and Pacamara. Each variety is farmed separately in "pure lots" to ensure traceability and the highest cup quality. Only perfectly ripe red cherries are hand-picked during harvest — nothing is left to chance.
Three Processing Methods
Don Pepe Estate uses three different processing methods to bring out the best in each variety:
- Washed (Fully Washed): Produces clean, bright cups with fruity, balanced flavors and lighter body — the method that best showcases terroir
- Honey Process: The mucilage (sugar-rich layer) is left on the bean during drying, creating deeper sweetness and fuller body
- Natural (Dry Process): The whole cherry is dried intact, resulting in high body, exotic flavors, and low acidity
After processing, the beans are dried on raised African beds — a technique that provides optimal airflow and even drying — then carefully classified by variety and harvest date before export.
Award-Winning Recognition
Don Pepe Estate has earned recognition at the prestigious Best of Panama competition and has built a strong international presence, exporting to specialty coffee markets in South Korea, Japan, Taiwan, China, Australia, New Zealand, and the United States. In 2019, Japan's Hiro Coffee certified Don Pepe as a safe, sustainable, and high-quality coffee — a significant stamp of approval from one of the world's most discerning coffee markets.
Don Pepe Estate Coffee: Tasting Notes
Don Pepe's coffees are known for their refined, complex profiles. Depending on the variety and processing method, you can expect:
- Geisha: Jasmine, gardenia, berries, citrus — light-bodied, tea-like elegance with extraordinary sweetness
- Caturra & Catuai: Clean, balanced, with bright acidity and notes of green apple, citrus, and chocolate
- Bourbon & Typica: Smooth, silky body with raspberry, apricot, and walnut notes
- Java: Complex and exotic — often singled out by visitors as a standout during farm tastings
Across all varieties, Don Pepe coffees share a signature character: silky, creamy body with aromatic citrus scents and clean, fruity sweetness.
How to Brew Don Pepe Estate Coffee
To get the most out of Don Pepe Estate's complex flavor profiles, we recommend these brewing methods:
Pour Over (Best for Geisha and Washed Coffees)
A Hario V60, Chemex, or Kalita Wave is ideal for Don Pepe's lighter, more aromatic varieties. The paper filter produces a clean cup that highlights the floral and citrus notes. Use water at 92–94°C, a medium-fine grind, and a ratio of about 60g of coffee per liter of water. For the best grind consistency, try the JavaPresse Manual Coffee Grinder.
French Press (Best for Natural and Honey Process)
Don Pepe's fuller-bodied natural and honey-processed coffees shine in a Bodum Chambord French Press. The metal filter allows the natural oils through, emphasizing body and sweetness. Use a coarse grind and steep for 4 minutes.
Drip Coffee Maker (Great All-Around)
For a no-fuss daily brew, a quality drip machine like the OXO Brew 8-Cup will produce a balanced, flavorful cup from any Don Pepe variety. Use a medium grind and fresh, filtered water.
Espresso
Don Pepe's Caturra and Catuai varieties work beautifully as espresso, producing rich crema and a sweet, chocolatey shot. A machine like the De'Longhi Dedica Arte is an excellent home option. For stovetop espresso, try the Bialetti Moka Express — a classic pairing with Panamanian coffee.
